Ingredients
- 1 cup long grain white rice
- 1-2 cinnamon sticks
- 11 oz can sweetened condensed coconut milk
- 9.5 oz can evaporated coconut milk (or canned coconut cream)
- 1 cup unsweetened dairy-free milk of choice
- 1 tbsp pure maple syrup
- Cinnamon, to garnish
- Craize Guava Crackers, to garnish
Directions
- Heat a large pot over high heat and fill it with water. Once boiling, add the rice and cinnamon sticks. Boil for about 15-17 minutes, then drain the rice. Remove the cinnamon sticks.
- Place the rice back into a pan over medium heat and add the sweetened condensed coconut milk, evaporated coconut milk, dairy-free milk of choice, and maple syrup.
- Bring to a heavy simmer, and reduce the heat to medium-low.
- Simmer, stirring frequently, for about 20-30 minutes or until the rice is fully cooked through and the mixture has thickened into a pudding consistency.
- Remove from the heat and let cool.
- Dish up into your serving dishes, and garnish with a pinch of cinnamon and a Craize Guava Cracker!
